The bar at Baia is a Mediterranean one. Citrus, herbs, sea salt and stone fruit do the heavy lifting, spirits stay clean and considered. The list reads like a slow afternoon – bright at the top, deeper as the light goes.
Signature serves built around the island – Eunoia, Kyma, Sel Star, Noema. Classic spritzes the proper way. A mocktail section that takes itself seriously. A Greek wine list, an Aegean leaning, and the easy presence of an Asyrtiko by the glass.
From morning, it is coffee, juices and a slow Aperol. By lunch, the wine arrives. From four, as the music leans in, the bar is at its full pace — and finishes the day with the sun.
